1. What is peculiar smell in the cold room? That is under the influence of external factors, the cooking materials and food in the cold storage produce an abnormal smell through the change of physical chemistry, which will stick to the wall, ceiling, equipment and tools of the cold storage for a long time. In general, there are several reasons for the peculiar smell in the cold storage: there is a peculiar smell in the cold storage before entering the food. Before entering the freezer, the food will be rotten, such as rotten eggs, meat, fish, etc. The refrigerated storehouse where fish have been stored and meat, eggs, fruits and vegetables, and other foods have been stored without cleaning, resulting in odor infection and deterioration. Generally, it is necessary to strengthen the maintenance of the refrigeration equipment. It is strictly prohibited to dump and unload, to avoid damaging the pipeline and causing refrigerant leakage. In the process of cold processing, the cold storage must be kept at a certain temperature, and frozen food shall not be transferred or stored. 3. The ozone method is used to eliminate peculiar smell in cold storage. Ozone has a strong oxidizing effect. It can not only eliminate the peculiar smell of cold storage but also stop the growth of microorganisms. The ozone generator can eliminate the peculiar smell in the warehouse. If there is more fat in the cold storage, it is not suitable to use oxygen treatment to avoid rancidity caused by fat oxidation. Formaldehyde method. Remove the goods from the cold storage, disinfect and remove the peculiar smell with a 2% formaldehyde solution (i.e. formalin solution). Vinegar method. It's a refrigerated warehouse filled with fish. It's fishy. It is not suitable to pack other food. It is not allowed to pack other food until the fishy smell is completely eliminated. Generally, vinegar is used to remove the fishy smell. The specific method is: after the fish comes out of the cold storage, clean the frost layer on the evaporating pipe group and keep the storehouse temperature below --50 degrees Celsius, then makeup 50-100 grams of vinegar with each cubic meter volume in the cold storage warehouse, spray it into the storehouse with a sprayer, close the storeroom door first, and intermittently start the blower, so that the vinegar evaporates and flows in the storehouse, which makes the vinegar absorb a lot of fish smell.
