Why Should Seafood Be Refrigerated?
Because seafood is not easy to preserve and easy to breed bacteria, it is necessary to slow down their life metabolism process and keep their freshness through refrigeration so that seafood can be preserved for a long time.
Generally, seafood can be stored in the refrigerator for a long time, but cooked fish food can't be stored in the refrigerator for too long, which will affect the taste. At the same time, it should be sealed to put in the refrigerator, otherwise, it will make the refrigerator full of peculiar smell.
When handling and storing seafood, separate raw food from cooked food. Special equipment and utensils, such as knives and chopping boards, are required for processing raw food. Use utensils to store food and avoid contact between raw and cooked food. The processing and cooking should be done thoroughly. When eating cold mixed aquatic products, they should be cleaned and blanched with boiling water for several minutes to kill Vibrio parahaemolyticus and parasites.
If there are unprocessed aquatic products, please put them in the cold room for seafood and keep them below - 18 ℃. If there are unfinished (cooked) aquatic products, please store them in the refrigerator and freezer, and keep them at 4 ℃. Before eating again, it must be fully heated (the central temperature should be above 70 ℃)
Tips for seafood preservation
There are two kinds of fish: freshwater fish and seawater fish. Generally, the freshwater fish supplied on the market is alive, while the seawater fish are frozen.
As for fresh fish, before putting it into the refrigerator, we should do some treatment first, remove the internal organs and scales, wash it, cut it into pieces, and pack it in a fresh-keeping bag, to avoid the fishy smell diffusion of fresh fish.
The frozen fish can be stored directly in the freezer, and it is better to be quick-frozen, but it should be noted that after thawing, the frozen fish is not suitable for long-term storage in the refrigerator.
For the storage of shrimps, the shrimps should be washed with water first, put into a metal appliance, inject cold water, and put into the freezer for freezing; after freezing, take them out, put them at room temperature for a while, pour out the frozen shrimps; after packaging with fresh-keeping bags, put them into the freezer for storage.
